Fatty acids can be great for your health. This is particularly the case of omega-3s, which are natural constituents of fat. There is little trans fatty acid in nature. They are mostly present in processed products. The consumption of trans fatty acids increases the risk of cardiovascular disease by storing bad cholesterol. When essential fatty acids promote the circulation of cholesterol, trans fatty acids have the opposite effect. Favoring natural foods reduces the consumption of trans fatty acids.

Cooking fresh seasonal produce reduces the risk of trans fatty acids. However, some mainstream consumer products contain some. They make it possible to stabilize the oils that compose them, in terms of their smell and their shelf life. So trans fatty acids are found mainly in chocolate bars, pastries, sweet and savory biscuits. On the labels of processed products, trans fatty acids are not necessarily mentioned. They are sometimes referred to as "partially hydrogenated fats".
